Easter is coming up and who does not love a good cocktail during a holiday? Therefore, we will provide you with three delicious easter related cocktails. We hope you enjoy :)

Simnel Cake Sour

Are you a fan of an Amaretto Sour? Then the Simnel Cake Sour is just the thing for you.

Serves: 4

Preparation time: 15 minutes

What do you need? 

  • 25ml kirsch or brandy

  • 100ml amaretto

  • Juice 1 lemon

  • Juice 1 orange

  • 100ml Madeira

  • Ice

  • 50g golden marzipan 

  • 100g golden caster sugar

  • A thick strip of orange zest

  • 1 tsp cinnamon

  • 1 tsp mixed spice

  • Pinch dried ginger

  • 4 cocktail sticks

How do you make it? 

  • Start by making the spiced syrup. Put the 100g golden caster sugar, the thick strip of orange zest, 1 tsp cinnamon, 1 tsp mixed spice, and a pinch of dried ginger into a saucepan with 100ml water. Gently bring to the boil, then turn the heat off and allow to cool completely. Once cold, pour the mixture through a sieve into a jug and chill until needed. Will keep in the fridge for up to 1 week. 

  • Heat grill to high, then roll the marzipan into 4 balls and place on a baking sheet and grill for 2-3 minutes or just until the very top of the marzipan is toasted. Leave to cool. Then, when cold enough to handle thread them on the cocktail stick. 

  • Fill 4 tumblers with ice then pour the brandy, Amaretto, lemon and orange juice, Madeira and 50ml of the syrup into a cocktail shaker with a large handful of ice. Shake well until the outside of the shaker feels icy cold. Strain into the tumblers and add the marzipan garnish. Serve immediately. 

 

White Rabbit Cocktail

Are you a big Amaretto lover but not the sour kind? Here we have a sweet and delicious Amaretto cocktail just for you.

Serves: 2

Preparation time: 5 minutes

What do you need? 

  • 80ml gin

  • 50ml amaretto

  • 50ml double cream

  • 1 tsp lemon curd

  • ¼ tsp vanilla paste

  • Handful of ice

  • Edible flowers to serve

How do you make it?

  • Put the gin, amaretto, double cream, lemon curd and vanilla paste into a cocktail shaker with a handful of ice and shake until the outside of the shaker feels very cold. Strain into two small cocktail or coupe glasses and garnish with edible flowers before serving. 

 

Mini Egg Martini

Are you not a big fan of Amaretto, but you are craving some chocolate eggs? Don’t worry. We got you covered. 

Serves: 1

Preparation time: 10 minutes

What do you need? 

  • 25g mini chocolate eggs

  • 1 tsp honey

  • 25ml creme de cacao

  • 25ml Baileys

  • 50ml vodka

  • Ice 

How do you make it? 

  • Crush the mini chocolate eggs in a pestle and mortar, then tip onto a small plate. Brush the rim of a martini glass with a little of the honey using a pasty brush then dip into the crushed mini chocolate eggs to stick them on. Pop the glass in the fridge until you need it.

  • Pour the creme de cacao, Baileys, and vodka into a cocktail shaker with a handful of ice and shake until the outside of the shaker feels really cold. Strain into your prepared glass and serve.
